Shiner Marinated Flat Iron Steak

INGREDIENTS

FOR THE MARINADE

- 2 cups canola oil
- 1/2 cup lite shiner bock beer
- 2 tablespoons chopped garlic
- 3 each limes, juiced

FOR THE DRY RUB

- 1/2 cup kosher salt
- 1/2 cup cracked black pepper 
- 1 1/2 tablespoons graulated garlic
- 1 1/2 tablespoons graulated onion
- 1 1/2 tablespoons smoked paprika
- 1 teaspoon cayenne pepper

METHOD

 
  1. FOR THE MARINADE
    Combine all ingredients into a shallow casserole dish.
    Place meat into marinade and cover with plastic wrap.
    Place into refrigerator for 6-8 hours.
    Flip over halfway through marination time.
  2. FOR THE DRY RUB
    In a small bowl, combine salt, pepper, garlic powder, onion powder, paprika and cayenne powder. Mix with your fingers to make sure there are no clumps.
  3. TO FINISH THE STEAK
    Preheat grill to 450.
    Remove flat iron steak from marinade and place on paper towel lined sheet pan. Leave out for 30-45 min.
    Generously apply or rub the seasoning over the entire surface of the meat.
    Cook for 2-3 min on each side or until desired doneness. Rest for 5min before slicing against the grain into 4 equal portions.
